Quick-Fried Cauliflower with Hot Oil Dressing

Ingredients

1000 g (about 2 lbs) cauliflower

Seasonings

5 g Sichuan pepper oil, 5 g fine salt, 5 g chopped scallions, and 10 g ginger.

Instructions

1. Trim the roots off the cauliflower, wash it thoroughly, break apart the florets, and cut them into small bite-sized pieces.

2. Blanch the cauliflower in boiling water, then drain well and arrange on a plate. Sprinkle with salt, top with ginger and scallions, then heat the chili oil and drizzle it over everything. This dish is beautifully presented and delicious, perfect as an accompaniment to drinks or rice.
